Whenever I think of venison storage I think of a freezer. Maybe it's because everyone I know that is a hunter freezes whatever game they obtain for future use. So I was surprised when I heard of the idea of canning venison. Pickles sure, but venison? Really?
So after doing a bit of digging I have found that this is actually a thing that people do. There are some benefits of it that I find interesting. For example what happens when your freezer breaks. I have known a few friends this has happened to. Sure you can call a large group of people over and have a big potluck but what if you need your venison? You can't refreeze your venison once it's thawed so this seems like a sure fire method to keep it fresh!
