
Food allergies take what most would consider a thoughtless process and turn it into something that takes extra planning and time. Especially when it comes to stocking up on food when you are allergic to some of the most common things within the food itself (here's looking at you gluten).
So what are we to do? Well, it's simple actually there are some simple substitutions that we can make that will help.
EGGS:
There are many people out there that are allergic to eggs and while eggs may not have a super long shelf life for food storage and prep you need to be aware of what can work in its place. I will admit the answer to this one surprised me a bit as I was totally unaware of it prior to my research. The answer- FLAXSEED!
Flaxseed actually have the same texture as eggs when they are ground up and mixed with water!
Grass fed meats are also a great way for those who are allergic to eggs to get the proper amounts of choline that they would otherwise get from eggs.
TREE NUTS:
Sure it would be nice if everyone could eat tree nuts, it would make surviving in a post-collapse society a little simpler but unfortunately, not everyone has that ability. so what you will want to do is stock up on Sunflower, Hemp, Chia, or pumpkin seeds. These items provide a great source of nutrition while staying away from the main allergens that are contained in tree nuts.
LACTOSE:
While this may be a common allergy for many people it is still something to consider if you are stocking up on a lot of powdered or condensed milk, cream, etc. One of the things you will want to look at is RAW MILK.
When storing raw milk it is best to freeze it using an airtight container and be sure to leave at least 1/2 inch headspace at the top (or 1½ inches if you're using a narrow-mouthed container) as the milk will expand when frozen. Thaw the milk in your refrigerator and plan to use it within two or three days.
CASEIN:
Different than lactose but found in many of the same foods if someone is allergic to casein you will want to stock up on some leafy greens. The calcium will help substitute the nutrients that they are not able to get otherwise.
GLUTEN:
Oh, the things that contain gluten are numerous. This makes it especially hard for those who are intolerant of its effects. Thankfully there is a very simple substitution when it comes to planning for food storage and that is Quinoa! This grain can solve many problems for those who suffer from a gluten intolerance.
In fact, it is so popular that NASA scientists have been looking at it as a suitable crop to be grown in outer space, mostly based on its high nutrient content, ease of use and how easy it is to grow.
So there you have it. 5 Substitutions for those who suffer from food allergies. When it comes to prepping you need everyone at their best and by planning for these allergies you can advert a lot of discomfort and wasted time by having the right things on hand when you need it.
